DATE FILLED PINWHEEL COOKIES 
Filling:

4 c. ground dates (or chopped finely)
1/2 c. water
1/2 c. sugar
1 c. chopped walnuts

Cook dates, water and sugar on medium heat until thick. Cool and add 1 cup chopped walnuts. Set aside.

Cookies:

1 c. (2 sticks) butter
2 c. brown sugar
3 eggs, unbeaten
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
4 c. all-purpose flour

Mix butter, sugar and eggs together until well mixed. Add baking soda, cinnamon, salt and flour and mix well.

Cut dough into 4 equal parts. Roll each part on a floured board. Spread each with 1/4 filling. Roll up like a jelly roll. Chill overnight.

Next day, slice each roll into 1/2-inch slices and place on cookie sheet.

Bake at 350°F about 12 minutes.
