DATE & NUT PINWHEEL COOKIES 
1 c. butter
2 c. brown sugar
3 beaten eggs
4 c. flour
1/2 tsp. salt
1/2 tsp. baking soda

FILLING:

1 c. sugar
1 c. water
2 c. chopped dates
1 c. finely chopped nuts

Cream the butter and brown sugar; add eggs. Sift together the flour, salt, and soda. Mix creamed ingredients and sifted ingredients with hand. Divide into 3 rolls; chill.

Cook ingredients for filling 10 minutes; cool. Roll each chilled roll of dough between 2 sheets of waxed paper. Spread with filling. Roll and chill overnight. Slice and bake on well-greased cookie sheet. Bake at 350 degrees for 10 minutes. Yield: 7 dozen.
