DAN'S HAYSTACKS 
Makes a high-protein, high-fiber, nutrient-rich, hot and spicy meal for one!

1 (15 oz.) can black beans, drained
1 deep green and fat jalapeno chili, diced
3 handfuls corn chips (Fritos or restaurant style)
1/2 cup grated sharp cheddar cheese
2 fistfuls of fresh baby leaf spinach (shred it!)
1 medium dark red tomato, diced
a couple generous spoonfuls sliced black olives

Throw beans in a saucepan with the jalapeno, heat 'til bubbly. While they're warming, spread your chips across a dinner plate. Drizzle beans over chips (drained first is okay), then cover with your cheese. Shred your spinach (by hand, loosely) over this foundation, and follow with tomato and olives.

FUN HINT: Try other toppings on your cheesy-beany-chips foundation -- salsa, avocado, onion, other cheeses, etc. And, try with toppings ala carte for the family!
