RAISIN COCONUT PUDDING | |
1/2 c. coconut 1 tbsp. melted butter 2 c. hot milk 2 tbsp. sugar 1 c. Sun Maid raisins 1 stiffly beaten egg white 1/2 c. bread crumbs 1 egg yolk 1/4 tsp. salt Add coconut, crumbs and butter to hot milk, beat egg yolk, mix with sugar, salt and raisins. Add to milk. Cool and fold in egg white. Pour into a greased baking dish and bake in moderate 350 degree oven until firm, about 15 minutes. VANILLA SAUCE FOR RAISIN COCONUT PUDDING 1/2 c. sugar 1 c. boiling water 1 tbsp. corn starch 2 tbsp. butter Pinch of salt 1 tsp. butter Mix sugar and corn starch and salt, add water gradually, stirring constantly, boil 5 minutes. Remove from heat, add butter and vanilla; stir to mix pour over pudding. |
