COCONUT PUDDING COOKIES 
2 1/4 c. unsifted flour
1 tsp. baking soda
1 c. butter, softened
1/4 c. granulated sugar
3/4 c. firmly packed light brown sugar
1 pkg. (4 serving size) Jello vanilla instant pudding & pie filling
1 tsp. vanilla
2 eggs
1 pkg. (6 oz.) coconut

Mix flour with baking soda. Combine butter, sugar, pudding mix and vanilla in large mixer bowl; beat until smooth and creamy. Beat in eggs. Gradually add flour mixture, then stir in coconut (batter will be stiff).

Drop by rounded measuring teaspoonfuls onto ungreased baking sheet, about 2 inches apart. Bake at 375 degrees for 7-9 minutes. Makes about 7 dozen.
