COCONUT-OATMEAL COOKIES | |
3/4 c. butter 3/4 c. sugar 1/2 c. lightly packed brown sugar 1 egg 1 c. whole wheat flour 1 c. rolled oats 3/4 c. coconut 1/4 c. wheat germ 1 tsp. baking powder 1 tsp. baking soda 1 1/2 c. raisins Cream butter, sugars and egg together thoroughly. Add flour, oats, coconut, wheat germ, baking powder and baking soda; mix well. Stir in raisins. Drop from spoonfuls onto greased baking sheets. Flatten slightly with floured fork. Bake in 350 degree oven for 12 to 15 minutes or until light golden. Makes about 36 cookies. 118 calories per cookie; 5.6 grams fat per cookie. Three cookies are an excellent source of fiber. |
