CRAB MEAT BISQUE 
6 tbsp. butter
4 tbsp. onion
1 scallion, chopped
2 tbsp. parsley
1 1/2 c. mushrooms
1 1/2 c. crab meat
3 tbsp. sherry
2 tbsp. flour
1 c. milk
1 tsp. salt
Dash of Tabasco sauce
1 1/2 c. half and half

Melt butter and onions, scallions, parsley, mushrooms and saute until soft about 5 minutes in saucepan. Heat 2 tablespoons butter, stir in flour, add milk, cook until thickened. Stir in salt, pepper, Tabasco, vegetables, and half and half. Bring to a boil and add crab meat. Simmer uncovered 5 minutes. Just before serving add sherry.
