FIESTA CASSEROLE 
1 lb. ground beef
1 (1 1/4 oz.) pkg. taco seasoning mix
1 (16 oz.) can refried beans
1 (11 oz.) can nacho cheese soup
1/2 c. Monterey Jack cheese, shredded
1/2 c. sliced olives
1 c. sour cream
2 green onions, minced
Corn tortilla chips
1 can corn

Place meat in 2 quart casserole dish and microwave on high for 5 minutes. Stir after 2 minutes. Drain. Add taco seasoning; stir to combine. Spread beans in bottom of casserole; top with beef mixture. Pour soup to within 1 inch of edge. Sprinkle with cheese and olives. Cook in microwave on high for another 15 minutes. Place sour cream over cheese to one side. Sprinkle with green onions. Arrange chips around edge.

Since microwave ovens vary in power, you may need to adjust your cooking time.
