FIESTA CASSEROLE 
1 1/4 lb. ground beef
1 tbsp. chili powder
3 garlic cloves, minced
2-3 med. tomatoes, chopped
2/3 c. mayonnaise
1 c. sour cream
1/4 c. jalapeno peppers
1/4 c. chopped onion
1 c. shredded sharp cheese
2 c. biscuit mix
1/2 c. cold water

Lightly brown meat, garlic, and chili powder. Combine sour cream, mayonnaise and chopped onion, set aside. Combine biscuit mix and cold water, and pat dough in 13 x 9 inch pan. Spread meat mixture over dough evenly. Top with chopped tomatoes, jalapeno peppers and 3/4 cup of cheese. Spread sour cream, mayonnaise, and chopped onion mixture over this. Use rest of cheese for topping. Bake at 350 degrees for 25-35 minutes. Set a few minutes before cutting. Serves 6-8.
