FIESTA RICE CASSEROLE 
1 stick butter
1/2 c. green onions, chopped or 1 med. onion
1 sm. bell pepper
1/2 c. celery, diced

Melt 1 stick butter in casserole; saute the onions, pepper and celery. Add:

1/2 c. cream of chicken soup
1 1/2 soup cans water
1 sm. jar pimento
1 can cream of celery soup
1 can water chestnuts, sliced
1 1/2 c. raw rice

Bake in 300 degree oven in a covered 2-quart casserole for 1 hour or until done.
