FIESTA CASSEROLE 
1 lb. ground beef
1 pkg. taco seasoning mix
1 (16 oz.) can refried beans
1 can nacho cheese soup
1 c. (4 oz.) shredded Monterey Jack cheese
1/2 c. pitted black olives, sliced
1 c. sour cream
2 green onions, minced
Round tortilla (corn) chips

In microwave-safe 2 quart casserole, cook meat on high for 5 minutes, stirring after 2 minutes. Drain off fat. Place meat in a bowl. Add taco seasoning mix; stir until combined. In bottom of casserole, spread beans. Cover with beef mixture. Pour soup over meat within 1 inch of edge of dish. Sprinkle with cheese and then olives. Cook on high for 15 minutes or until cheese melts and mixture is bubbly. Place sour cream on cheese at one side of casserole; sprinkle with green onions. Arrange tortilla chips around edge of dish. Makes 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
