LOW - CALORIE BLUEBERRY MUFFINS 
1 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
5 tbsp. water
1 tsp. grated orange peel
5 egg whites
1 tsp. cream of tartar
3 tbsp. sugar
1/4 tsp. almond flavoring

Sift flour; measure. Add baking powder, cinnamon, and salt; sift again. Add nuts, dates or blueberries, etc. to this mixture. To unbeaten egg whites, add the water. Beat until just stiff. Beat in sugar. Fold dry mix lightly into egg whites. Sprinkle on a little salt and cream of tartar. Beat; add orange peel and flavoring. Quickly fill oiled muffin tins (or paper lined) almost full with batter. Bake in preheated oven at 375 degrees. Yield: 16 muffins.
