BLUEBERRY-BANANA MUFFINS | |
1 med. banana, mashed 1/3 c. skim milk 2 tbsp. vegetable oil 2 egg whites 2 c. Bisquick 1/4 c. sugar 1/2 tsp. ground cinnamon 1/2 c. frozen blueberries, thawed and drained Grease bottoms only of 12 medium muffin cups. Beat banana, milk, oil and egg white in medium bowl. Stir in baking mix, sugar and cinnamon until moistened. Fold in blueberries. Fill muffin cups 3/4 full. Bake 20 minutes in 400 degree oven. Cool before removing from pan. |
