BEAN SOUP
1 c. white beans
1/2 lb. ham or a ham bone
2 qt. water
1 qt. whole milk
1 slice onion
2 tbsp. flour
Salt & pepper to taste

Wash beans and soak overnight. Cook meat with onion until very tender. Remove from broth with a slotted spoon. Add beans and cook until very tender. If they go all to pieces, that is all right. Cut meat into small pieces. Add meat and onion to the beans. Slowly heat milk to hot, but not boiling; add seasonings.

Mix flour with small amount of warm water, stir until very smooth. Add last to the soup. Serve piping hot.
