TUNA AND MUSHROOM QUICHE 
2 (9") pastry crusts
1 c. heavy cream
3 eggs
Salt & pepper
Nutmeg
3 tbsp. butter
1 sm. onion
1/2 lb. mushrooms
1 (12 oz.) can tuna
Dash of lemon juice
2 tsp. dill seed
1/4 lb. Swiss cheese

Preheat oven to 375 degrees. Partially bake crusts. While baking crusts mix cream and eggs in bowl. Season with salt, pepper and a pinch of nutmeg. Reserve. Melt butter in skillet and add chopped onion and sliced mushrooms, cooking mixture for 8 minutes. Drain excess liquid. Add tuna and her thoroughly, adding lemon juice and dill seed. Spread mixture into partially baked crusts. Pour egg and cream mixture over tuna and top with grated cheese. Bake 35 to 40 minutes until lightly browned. Test with toothpick until come out dry. Other options for tuna: salmon, shrimp, broccoli or spinach.
