THE BEST FIG PRESERVE CAKE
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 c. sugar
1 c. corn oil
3 eggs
1 c. buttermilk
1 c. mashed fig preserves
1 tsp. vanilla flavoring
1 c. ground nuts

Sift flour, soda and salt together. Put in mixer and add sugar, oil and eggs. Mix well with beater on medium speed until well blended. Add buttermilk, figs, vanilla and nuts and blend slowly. Bake in oblong pan, 9 x 13 x 2 inches that has been greased. Bake at 325 degrees for 35 minutes until toothpick inserted will come out clean. Remove from oven. While hot, pour this icing over cake. I prick my cake first all over with ice pick so icing will penetrate.

ICING:

1 c. sugar
1 tbsp. Karo syrup
1/2 c. buttermilk
1 stick butter
2 tsp. vanilla flavoring
1/2 tsp. baking soda

Combine all ingredients in saucepan. Place over medium heat and stir. Cook 3 minutes after it boils. Pour over hot cake. Cut when cool into squares.

There were a lot of similar Fig Preserve Cakes, and I picked this one because it said to "prick the cake" then pour on the icing; something my mother always did.
This cake is absolutely the best cake I have ever put in my mouth, and was so easy to make. I shared it with neighbors and co-workers. EVERYONE, without exception, said "wow" just with the first bite. Everyone LOVED it. Over and Over again the same thing. "That was REALLY good!". I will definitely make this cake. I'm glad Thanksgiving and Christmas is on the way! I did have to bake the cake for 45 minutes.
