“CINNAMON COFFEE CAKE” IS IN:

CINNAMON COFFEE CAKE 
1 1/2 cups all-purpose flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup sugar
1 egg
1/4 cup vegetable oil
3/4 cup milk

Cinnamon Crumb Topping:

1/3 cup all-purpose flour
1/2 cup sugar
1/4 cup (1/2 stick) butter, softened
3/4 teaspoon cinnamon

Coconut Nut Topping:

2/3 cup brown sugar, packed
1 cup flaked coconut
1/3 cup butter, softened
1/4 cup heavy cream
1/2 cup finely chopped nuts (optional)

Preheat oven to 375°F.

Combine dry ingredients for cake. Beat together egg, oil and milk, then add to dry ingredients.

Brush a square or circular pan with butter. Dust the pan with flour and tap out any excess. Fill pan with cake batter and level off top with a spatula. If using the Cinnamon Crumb Topping, spread over top of cake and bake.

If using Coconut Nut Topping, combine ingredients after cake is baked and spread over cake while still warm. Broil on low (just under top burner in oven) until lightly golden. Watch carefully so as not to burn.

Bake at 375°F for 20-25 minutes.

I loved it. I do not cook, and as a very new mother I have to buckle down and learn or starve! Anyway I think I did it perfect except my crumb topping ended up on the bottom of the cake after cooking, is that normal? Also I don't know if this was right, but when the recipe called for softened butter I melted it, was that correct as well or is that why the crumb topping fell to the bottom? Sorry I just am really new at this and want to get it right!

Yes. If you melt the butter it makes the topping more of a batter and yes it sinks into the cake. Just soften the butter for about 15 seconds in the microwave. Some will still sink in but it gives it a streusel kind of taste and that's okay.

Good, but needs more cinnamon (I'd up it to 1 tbsp. I would also recommend pouring 1/2 of the batter into your baking dish, sprinkling with 1/2 of the cinnamon topping, swirling it through the batter with a knife, then adding the rest of the batter and sprinkling with the remainder of the topping. This would give the cake more flavor throughout. I had to bake it for 30 minutes in a fully preheated oven.

I took another commenter's advice and put some of the filling in the cake itself; to do this, I actually made an extra half of the recipe for the filling and put that in. Only thing is that it came out tasting a little salty, but that may have been due to my milk substitute that I used.

Wow! Every positive review in here is correct! Mine is still cooling, but I had to taste it and it is sooo good! I love the fact that it is made with oil (not that much either) because it really helps give it that moist texture. Loved everything about this cake. I read the reviews first, and I also added vanilla and some cinnamon to the batter. I also used half white sugar and half brown sugar in my streusel topping. I skipped the coconut topping (yuck). This recipe is definitely going in my keeper file! Lovely for breakfast or even after dinner dessert!

Very good! I added 1/2 tsp vanilla extract, and like many others I had to bake it for 30 minutes. But it was GREAT! Lots of yummy crumb topping! Easy to mix up too. You can mix up the whole thing, topping included, in the time it takes to warm up the oven, maybe 10 minutes. So in a maximum of 40 minutes, you have a homemade coffee cake! Lots of possibilities here too. . . fruits added, nuts added, drizzled icings, etc. Have fun!
