6 lg. potatoes 2 c. lg. curd cottage cheese 1 c. sour cream 2 cloves garlic, put through a press 1 tsp. salt 2-3 scallions, finely chopped 1 c. grated Cheddar cheese Peel and boil potatoes until they are just barely tender, not yet soft. Cut them into 1-inch cubes and combine them with the cottage cheese, sour cream, garlic, salt, and scallions. Turn the mixture into a buttered casserole and sprinkle the cheese on top. Bake at 350 degrees for 1/2 hour. Serves 6-8. |
