CHOCOLATE TRUFFLE COOKIES 
1/2 c. powdered sugar
1 c. butter, softened
1 1/2 tsp. vanilla
1 oz. (1 square) unsweetened chocolate, melted
2 1/4 c. flour
1/4 tsp. salt
6 oz. pkg. chocolate chips
1/4 c. powdered sugar
2 tbsp. unsweetened cocoa

Heat oven to 375 degrees. Lightly grease cookie sheet. In large bowl beat 1/2 cup powdered sugar and butter until light. Add vanilla and chocolate; blend. Lightly spoon flour into measuring cup, level off. At low speed blend in flour and salt. By hand stir in chocolate chips. Shape into 1" balls; bake at 375 degrees for 10 to 12 minutes. Cool completely. In small bowl combine 1/4 cup powdered sugar and cocoa. Roll cooled cookies in cocoa mixture. Makes 4 dozen.
