SAUSAGE & EGG SOUFFLE 
1 1/2 lb. sausage
9 eggs
3 c. milk
1 1/2 tsp. mustard
1 tsp. salt
3 slices bread (cut in 1/4 inch cubes)
1 1/2 c. grated cheddar cheese

Brown and drain sausage. Cool. Mix eggs, milk, mustard and salt using mixer. Fold in cheese, bread and sausage. Bake in 9 x 13 greased pan, uncovered, for 45 minutes at 350 degrees. This may be prepared the night before and refrigerated and baked the following morning. Great served with fruit cup and English muffins.
