RED VELVET CAKE 
2 1/2 c. flour
1 c. buttermilk
1 1/2 c. sugar
1 1/2 c. Wesson oil
1 tsp. baking soda
1 tsp. vanilla
2 tbsp. cocoa
2 oz. red cake coloring
2 eggs
1 tsp. vanilla

Cream sugar and oil. To that, add eggs; beat well. Add vinegar and food coloring to sugar mixture. Mix well. Sift dry ingredients and add alternately with milk. Add vanilla and beat well. Bake in 4 layers, 30 to 35 minutes at 350 degrees. 1 tsp. vanilla 1 (8 oz.) pkg. cream cheese 1 c. chopped nuts (pecans or walnuts) 1 box powdered sugar

Cream butter and cheese. Add vanilla. Sift sugar and mix together. Add nuts and frost.
