CORN CASSEROLE 
1 med. onion, chopped
1 bell pepper, chopped
1 c. celery, chopped
1/2 c. butter
1 c. rice
1 jalapeno pepper, chopped
1/2 c. grated cheese
2 cans cream corn
Salt and pepper to taste

Cook rice as usual. Saute onion, pepper, and celery in 1/2 cup butter. Add corn, rice, cheese, and jalapeno pepper. Salt and pepper. Put in lightly greased casserole dish. Cook 45 minutes at 350 degrees.
