GELATIN PEACH PIE 
1 c. cool water
1 c. sugar
3 tbsp. cornstarch
2 tbsp. of peach flavored Jello
1 lg. can of sliced peaches
1 baked pie shell
Cool Whip or whipped cream

Bake pie shell and cool. Dissolve 1 cup of sugar, 3 tablespoons of cornstarch, and 2 tablespoons of peach flavored Jello in 1 cup of cool water, (the mixture will appear cloudy). Bring mixture to a boil until thickened and clear, stirring often. Set aside and cool, stir occasionally.

Drain peaches, cut into small bites size pieces, and mix into cooled mixture. Pour into baked pie shell and refrigerate. Top with Cool Whip or whipped cream and serve.

Other variations: Strawberries with strawberry Jello. Kiwi (peeled and sliced) with lime Jello.
