FOIL BAKED TURKEY BREAST 
1 half breast of turkey (2 to 2 1/2 lb.)
Salt
2 tbsp. butter
2 tbsp. grated Parmesan cheese
2 tsp. flour
1/4 tsp. dill weed
1/4 tsp. basil, crumbled
1/8 tsp. pepper

Sprinkle under side of turkey breast lightly with salt. Cream butter, cheese, flour, herbs, 1/2 teaspoon salt and pepper together. Spread over skin of turkey. Place on sheet of heavy foil. Bring edges together up and over meat and fold over twice. Fold ends twice to seal; place packet on shallow baking pan. Bake in a 350 degree oven for 2 hours. Open foil carefully and pour off juices. (About 2/3 cup juice collects in foil. May be thickened slightly with corn starch mixed with white wine or water.) Slice meat and serve with juices. Makes 4 to 6 servings.

This recipe was great! Enclosing the turkey breast in tin foil made it moist and juicy and the coating gave the turkey slices a tasty savory tease. It seemed like I was having dressing with my turkey. Used Shady Brook farms turkey breast. This is a keeper.
