ROAST BEEF 
4-5 lb. rolled beef roast

Place roast on roast rack or broiler pan. Place in oven. Preheat oven one hour at 375 degrees. "Do not open oven." Turn oven off for up to 2 hours. "Do not open oven." Set oven at 300 degrees and bake as follows:

45 minutes = rare

50 minutes = medium rare to medium

55 minutes = medium well to well done.
