ROAST BEEF 
This recipe is for people who like their roast beef rare to medium rare. Use a very good cut of beef for roasting, any size. Season the roast as you usually do. Preheat your oven to 500 degrees. Place roast inside and cook for 6 minutes per pound; then turn oven off and do not open the oven door. Leave the door closed for 2 hours after you turn oven off.
