FAVORITE PICKLED BEETS 
Beets
2 c. water
1 tsp. cloves
1 tbsp. cinnamon
2 c. sugar
2 c. vinegar
1 tsp. allspice

Select small young beets, cook in boiling water until tender. Dip into cold water. Peel and slice beets. Combine remaining ingredients in large kettle; bring to a boil. Stir until sugar is dissolved. Add beets to syrup and boil for 10 minutes. Pack into sterilized jars. Place sterilized lids and bands on jars as each is filled. Screw bands on tightly. Process in bath for 30 minutes.
