ELLEN'S GOOD BEET PICKLE RECIPE 
1 tbsp. salt
1 1/2 c. sugar
2 c. water, where beets are cooked
2 c. red vinegar
5 tbsp. cinnamon
1 tbsp. cloves
1 tbsp. allspice

Wrap spices in rag. Cut off the tops of beets, leaving 1 1/2 or 2 inches. Wash several times. Put in large container, cover beets in water. Boil until tender. Remove from water. Peel and cut up if necessary to pack in jars. Heat lids. Depends on the amount of beets. May have to double or more the ingredients.
