RICE - CHEESE CASSEROLE 
1 (2 oz.) can mushroom stems and pieces
1 tbsp. finely chopped onion
1 tbsp. butter
1/2 c. MJB long grain rice
2 tbsp. chopped parsley
1/2 c. grated cheese
1/2 tsp. salt
Dash of pepper
1 1/2 c. mushroom liquid and boiling water
1 tsp. meat extract

Drain mushrooms, saving liquid. Lightly brown mushrooms and onion in butter. Stir in rice, parsley, and cheese; turn into baking dish. Combine salt, pepper, meat extract, mushroom liquid, and water; pour over rice. Cover and bake in moderate oven (350 degrees) 45 minutes to 1 hour until rice is tender. Makes 6 servings.
