PERFECT WHITE BREAD | |
1 pkg. dry yeast 1/4 c. warm water 2 c. milk, scalded 5 3/4 to 6 1/4 c. sifted all-purpose flour 2 tbsp. sugar 2 tsp. salt 1 tbsp. shortening Mix yeast with warm water. Combine hot milk, sugar, salt and shortening; cool. Add 2 cups flour to milk, mix well. Add yeast, mix well. Add enough of the remaining flour to make moderately stiff dough. Knead dough 8-10 minutes. Shape into a ball. Place in a greased bowl; turn over. Cover; let rise in a warm place until doubled. Punch down, shape into 2 balls. Cover and let rest 10 minutes. Shape into loaves, put into greased loaf pans. Cover and let rise to double again. Bake at 400 degrees for 35 minutes. If bread is browning too fat, cover with foil for the last 15 minutes. |
