PERFECT CORN BREAD 
1 c. all-purpose flour, sifted
1/4 c. sugar
4 tsp. baking powder
3/4 tsp. salt
1 c. yellow cornmeal
2 eggs
1 c. milk
1/4 c. shortening

Sift together dry ingredients. Add eggs, milk and shortening. Beat with rotary or electric beater until just smooth. (Do not overbeat.) Pour into prepared pans for 20 to 25 minutes.
