BULGAR, MEAT AND VEGETABLES 
1 1/2 lbs. stew meat (lamb or beef)
2 c. bulgar wheat (lg. grain)
1 tsp. parsley
4 stalks celery
4 to 5 carrots
2 med. onions
2 tomatoes
1 sweet red pepper
1/4 c. butter
Paprika to taste
Salt and pepper

Soak bulgur in 4 cups of boiling water for 1/2 hour. Finely chop vegetables. Cut meat into dice size cubes. Saute meat, vegetables, garlic and parsley in utter. Add 2 cups water and cook until vegetables are tender. Add soaked barley and 3 to 4 cups additional water. Bring to a boil. Season with salt, pepper and paprika. Serves 4.
