ROASTED RED POTATOES | |
1 lb. small red potatoes 1 tbsp. olive oil 1/2 tsp. salt 1/8 tsp. pepper 2 tbsp. grated Parmesan cheese Cut potatoes into 1/4-inch thick slices; toss with oil. Place in a single layer in a 13 x 9 greased baking pan. Sprinkle with salt, pepper and Parmesan cheese. Cover tightly with foil. Bake at 350°F for 40 minutes or until tender. Makes 4 servings. |
