SHORTBREAD 
2/3 c. butter, room temperature
1/2 c. confectioners' sugar (can also use granulated)
1 1/2 c. sifted all-purpose flour
1/2 tsp. salt

Preheat oven to 325 degrees. Cream butter. Gradually add sugar until fluffy and smooth. Blend flour and salt into mixture (by hand not by machine). Press into 9 inch pie pan. Prick surface rim with a fork. Cut halfway into dough, making as many slices as you choose. Bake for about 50 minutes. Do not let brown. Cut when cool.
