QUICK AND DELICIOUS CORN MUFFINS 
1 1/3 c. biscuit mix
1/2 c. cornmeal
2 tbsp. sugar
2 eggs, beaten
2/3 c. milk

Combine dry ingredients, make a well in center of mixture. Combine eggs and milk. Add to dry ingredients, stirring until just moistened. Spoon into greased muffin tins. Bake at 400 degrees for 20 to 23 minutes. Makes 1 dozen.
