PERFECT CORN MUFFINS 
1 c. plain cornmeal
1/4 tsp. salt
1/4 tsp. baking soda
1 tsp. baking powder
1 tsp. sugar
1 egg
3 tbsp. oil
1 tbsp. mayonnaise
2/3 c. buttermilk

Sift together cornmeal, salt, soda, baking powder, and sugar. Beat egg, oil, mayonnaise and buttermilk with whisk until smooth. Quickly mix dry ingredients into moist ingredients until smooth. Fill greased pans 2/3 full and bake 20 minutes at 450 degrees. Serve immediately.
