INDIAN CORN MUFFINS 
1 c. white cornmeal
1 c. all purpose flour
1 tsp. salt
3 tsp. baking powder
2 tbsp. sugar
2 eggs, lightly beaten
1 c. milk
3 tbsp. butter, melted

Preheat the oven to 400 degrees. Grease muffin tins that are 1 1/2" in diameter.

Sift the dry ingredients into a mixing bowl.

Combine the eggs, milk and melted butter and add to the dry ingredients, mixing just until blended. Do not over mix.

Spoon into the greased muffin tins, filling each tin completely full. Bake at 400 degrees for 20 minutes or until done. Yield: 1 1/2 dozen.
