COCONUT OATMEAL COOKIES 
1 c. sifted all-purpose flour
1/2 tsp. Calumet baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 c. butter or other shortening
1/2 c. granulated sugar
1/2 c. firmly packed brown sugar
1 egg
1 tsp. vanilla
1/2 c. quick cooking rolled oats
1 c. Angel Flake coconut

Sift flour with baking powder, salt and soda. Cream butter. Gradually add sugar; cream until light and fluffy. Add egg and vanilla; beat well. Add flour mixture gradually, beating until smooth. Mix in rolled oats and coconut.

Drop by teaspoonfuls onto ungreased baking sheets. Sprinkle with additional coconut and bake at 375 degrees for 9 to 12 minutes, or until golden brown. Makes 4 dozen.
