FREEZING - THE COLD FACTS 
1. Bacon - crumble those extra pieces of cooked bacon and freeze. Use for topping on baked potatoes.

2. Bananas - run overripe bananas through a sieve or mash them. Add a little lemon juice and freeze. Perfect later for cake and or breads.

3. Blueberries - freeze in basket they come in. Don't wash. Wrap in foil or plastic wrap. They will keep their color and shape.

4. Eggs - egg whites freeze perfectly for up to 1 year. Two tablespoons defrosted whites equals 1 egg white.

5. Fish - freeze in milk carton full of water.

6. Lemon and orange rinds - grate rinds, then freeze. Use as needed.

7. Marshmallows - flash freeze and no more stale marshmallows.

8. Popcorn - should always be kept in freezer. It not only stays fresh, but freezing helps eliminate "old maids" when you pop it.

9. Potato chips - stay freshest when wrapped and stored in freezer. They don't get soggy.

10. Potatoes - leftover mashed potatoes; make patties and coat with flour for potato pancakes. Flash freezer, then store in plastic bag. Don't defrost before cooking or frying in oil.
