CORN SOUP | |
2 cups chopped onion 1 cup chopped celery 1 chopped bell pepper 1 cup chopped shallots 4 cloves chopped garlic 1 cup browned flour 1 block butter 1 can diced Rotel 1 can stewed tomatoes 3 cans whole kernel corn 2 cans creamed corn 1 quart peeled shrimp, seasoned 1 lb. smoked sausage salt, pepper, Tony's seasoning and hot sauce to taste Optional: 1 can lima beans 2 cups diced potatoes 1 can chicken broth may be added with liquid Wilt seasonings in butter, add shrimp and sausage and cook until shrimp are pink. Process tomatoes a little in food processor. Add to shrimp and seasonings. Simmer about 10 minutes. Stir in brown flour then gradually add liquid, stirring to blend. Add corn, lima beans and potatoes. Bring to a boil, reduce heat and simmer about 1 hour. Add more liquid if necessary. Season to taste. |
