JOYCE'S RICE PUDDING | |
1 c. Carolina rice 1/2 gallon milk 1 c. sugar 1 egg 1 tbsp. vanilla Rinse the rice with water a few times. Put in large heavy pot, cover with 1 inch of water. Let this come to a boil, then add 1 quart of milk. When the milk comes to a boil, add the other quart of milk and immediately add to this 1 beaten egg mixed with the cup of sugar. Let this simmer at a low to medium heat for about 50 to 60 minutes. Mix often as not to burn bottom. The mixture will be like oatmeal consistency. (It will thicken more when cool.) Put in a bowl and mix in the vanilla. Sprinkle with cinnamon. Eat when chilled. This pudding always makes a great hit. Enjoy! |
