FLUFFY MASHED POTATOES | |
4 pounds large peeled potatoes 1 can evaporated milk 1/2 cup butter Salt to taste Peel potatoes and cut into medium size pieces. Place potatoes into a large pot of boiling water. Let boil until they become fairly tender and a fork or knife goes through the potato easily. Drain water from potatoes and add potatoes to a large bowl. Add butter, half a can of evaporated milk and a couple teaspoons of salt. Blend with hand mixer on low speed. As potatoes become thicker add more evaporated milk and increase speed a little on mixer until these are fluffy and a nice consistency. Serve immediately. Submitted by: Karen Dansby |
