CARROT CASSEROLE 
2 lbs. carrots
1 sm. onion
1 tbsp. sugar (heaping)
1 stick butter
2/3 c. sharp cheese, shredded
1/4 c. mayonnaise
1 tsp. dry mustard
Cracker crumbs for topping

Slice carrots and cook until tender. Mash carrots slightly. Combine all ingredients, put cracker crumbs on top. (I use some of the butter on top of the crumbs.) bake 30 minutes at 375 degrees.
