SALMON LOAF 
1 (15 1/2 oz.) can Libby's pink salmon
1 c. rolled saltine cracker crumbs
2 tbsp. minced onion
1 tbsp. lemon juice
2 tbsp. melted butter
1/2 tsp. salt
Dash pepper
1 egg, beaten
2/3 c. milk
Creamed peas (optional accompaniment)

Drain and flake salmon. Add other ingredients and mix lightly. Pack mixture into a well-greased 8 x 4-inch loaf pan. Bake in a pre-heated 375 degree oven about 40 minutes.

Loosen edges, turn out onto serving plate. Let stand 1 or 2 minutes before slicing. Serve with creamed peas, if desired. Yields 6 servings.
