APPLE PANNEKOKEN 
2 tbsp. butter
2 tsp. cinnamon
2 tbsp. sugar
1 apple, preferably Granny Smith
3 eggs, whole
2 egg whites
1/3 c. whole wheat flour
2/3 c. flour
1/4 tsp. salt
1 c. milk

Melt butter in large pie pan (10 inch). Spread evenly around pan. Thinly slice apple. Add cinnamon, sugar and cook until apple softened. Beat eggs slightly; stir in flour, salt gradually adding milk beating until smooth. Pour into pan. Bake 15 minutes at 400 degrees. Bake 45 minutes at 325 degrees or until golden brown.
