PINEAPPLE OATMEAL RAISIN COOKIES 
2/3 c. shortening
1 tsp. salt
1 tsp. vanilla
1 c. brown sugar
1 egg, beaten
2 c. flour
2 1/2 tsp. baking powder
1 c. oats, instant
1 c. raisins
1 c. crushed pineapple
1 c. nuts (opt.)

Substitute 1/2 cup wheat germ if you don't like nuts or can't eat them.

Mix all ingredients together and blend until smooth. Drop by teaspoon onto cookie sheet. Bake at 350 degrees for 7 to 8 minutes. This is a very moist cookie.
