LESLEY'S YAMS
My family loves this recipe when made during the holidays!

3/4 cup (1 1/2 sticks) butter
1 (1 lb.) box light brown sugar
2 (21. oz. ea.) cans candied yams (drained)
2 tbsp. cinnamon
1 (12 oz.) can Pet milk (evaporated milk)
1 pkg. chopped pecans (optional)
1 or 2 pkgs. marshmallows (depending on how big your casserole dish is)
Pam cooking spray, butter or vegetable oil (for the dish)

First have all your ingredients ready. In a sauce pan melt butter on low heat. Second add box of light brown sugar, stir till simmered. Add drained mashed yams and cinnamon, mix well. Third add Pet milk (or Carnation if you must).

Also you may add chopped pecans at this point then stir till all is mixed well and thickened. If you desire more cinnamon, add to your liking, then transfer to a good size casserole dish sprayed with Pam or rubbed down with butter or vegetable oil. Add marshmallows on top to cover yams. Wrap top with foil or use casserole dish lid.

Bake at 350°F for 20 to 30 minutes or till you see the marshmallows turning a golden brown (remove cover to brown top). Let slightly cool, then serve!
