CANDIED YAMS WITH PRALINE
TOPPING
 
This has been a family favorite for years! It is delicious! I always make 2 pans, one to freeze for Christmas or share with other family members.

Yam mixture:

1 1/2 cups (3 sticks) butter
3 tbsp. vanilla
1 1/2 cups half and half
3 tbsp. cinnamon
9 cups mashed yams (each 29 oz. can is approx. 2 cups)
3 cups white sugar
3 tsp. salt
6 eggs

Melt butter. Cool and add all of the other ingredients. Mix well. Put into two well greased or sprayed 9x13-inch pans.

Topping:

3 cups dark brown sugar
1 1/2 cups all-purpose flour
3 cups chopped pecans
3/4 cup (1 1/2 sticks) butter
miniature marshmallows (optional)

Melt butter. Cool and add all of the other ingredients except the marshmallows. Put the topping on top of the yam mixture.

Bake at 350°F for about 45 minutes. Add marshmallows on the top for another 5 minutes until melted.

Marshmallows are optional... it is terrific either way. If you decide to freeze it, wait until ready to use then thaw and bake as above.
