SIZZLING FISH-VEGETABLE PLATTER
BAKE
 
3-4 lb. bluefish, haddock, snapper, trout or whitefish
Salt
Olive oil
2 lemons, thinly sliced
6 potatoes, peeled and sliced
6 onions, thinly sliced
3 lg. tomatoes, halved
2 peppers, green, seeded, cut into strips
Parsley
Pimiento strips

Preheat oven to 400. Grease large stainless steel or aluminum platter. (I use broiler pan.)

Rub fish with salt. Arrange on platter. Make deep slices on diagonal about 1 inch apart in fish; arrange lemon slices in slits. Brush fish with oil.

Arrange potatoes, onions, tomatoes and green peppers around fish. Brush vegetables with oil; sprinkle with salt.

Bake in preheated oven for 10 minutes. Reduce heat to 350 and bake 45 minutes or until fish flakes easily.
