APPLE PIE FILLING 
6 lb. (or 6 to 7 quarts) apples
4 1/2 cups sugar
2 tsp. cinnamon
1 cup cornstarch
1 tsp. nutmeg
1 tsp. salt
10 cups water
3 tbsp. lemon juice

In a saucepan, mix the sugar, cinnamon, cornstarch and nutmeg. Add the salt and water. Cook and stir until bubbly. Add the lemon juice. Pour over sliced apples in jars. Leave 1-inch headspace. Cold pack in boiling water bath 20 minutes.
